First up, credit for this idea (it feels too simple to call it a recipe!) goes to the amazing Cassey Ho at blogilates. Check her out if you like pilates – her workouts are fun, free and they really work. Cassey shared this as a healthy snack but I think it’s particularly great for toddlers. They can get involved with the mashing and the mixing, they will love the flavour and you can be happy that the pancakes are 100% natural with no flour or refined sugar.
1 small or 1/2 large ripe banana
Mash the banana then mix in the egg.
Lightly oil a frying pan and cook spoonfuls of the mixture over a low heat. When bubbles start to appear on the surface, carefully flip the pancakes and cook until lightly coloured.
Remove from the pan and eat straight away whilst warm – delicious!
