Courgette “spaghetti”

I’ve been meaning to try this for ages and now I don’t know why I didn’t do it sooner!  I’m not a fan of pasta and I don’t eat a huge amount of refined carbs so these are a revelation.

I bought a julienne peeler for £2.99 from my local kitchenware shop.  Simply use it on a raw courgette and hey presto, courgette “noodles” or “spaghetti”, no need to cook.

gratingWe ate these in a thai soup on Saturday night and they added a really interesting texture (souper-husband had normal noodles too as he was a bit scared of a low carb dinner).

I’m also planning to have them with some home-made pesto one night this week.  Give it a go!
