Easy trick to get over-ripe banana

A lot of my recipes (especially baby-friendly ones) use mashed over-ripe banana for sweetness – banana loaf, cake etc….

But what to do if you don’t have any that are even close to getting ripe?

Well, the easiest thing for me is to go to the local market and ask them for some old bananas at a bargain price but that’s not an option for everyone.  If you can wait until the morning to bake, peel and chop your banana(s) and freeze overnight.  Defrost in the microwave for expedience and tada, nicely mushy bananas for your baking.
