Summer soup – gazpacho

My favourite summer soup, and an incredibly easy version.  It’s not the bright red colour of gazpacho that comes in a carton, but it IS based on Jamie Oliver’s recipe so it must be “pukka”.  Because he’s very Spanish.

Moving on, all you need is a blender and you don’t even need to turn the oven on!  Peel the tomatoes if you have a masochistic streak but there really is no need.

Oh and of course you can make this without bread crumbs if you want; it will taste the same, just won’t be as filling.



6 ripe tomatoes

1 green pepper, de-seeded and roughly chopped

3/4 of a cucumber

2 garlic cloves, diced (or one rounded teaspoon of this stuff if you are, indeed, very lazy*)

1/2 an old baguette (or equivalent quantity of other stale bread), blitzed to crumbs

White wine vinegar

Garnishes of your choice – chopped cucumber, ham, hard-boiled egg, more bread, fresh herbs, ice


Pour some water onto the breadcrumbs and leave them soaking.

Put the green pepper into the blender with a little water and blitz.  Add the cucumber and blitz.  Add the tomatoes and garlic, blitz a bit more.  Add the bread and, you guessed it, blitz.

Add a tablespoon of vinegar and season, then add more vinegar to taste.  We waited and added salt at the table so that souper-baby could eat with us.

Put the soup into the fridge to chill until ready to serve . If you don’t have time to let it get really cold, serve over ice cubes in a pretty glass.  Orf-en-tic innit?
